Sterilization of meat products


Flexibility is vitally important for the effective sterilization of meat products. Not only does the retort have to ensure the correct heat penetration of the produce itself it also has to be capable of accepting cans and packages of various, often non-uniform shapes. The static retort is ideal for this purpose.

UUsing automatic or semi-automatic handling techniques it is possible for cans and packages of almost any shape to be secured safely within the crates using our new individual crate clamping system. Safe Sterilization Management (SSM) keeps you in control and provides full track and trace capabilities to conform to all international requirements. As with all foods it is essential to keep cooking times as short as possible, while maintaining adequate treatment. As canned meats are usually processed in a static retort it is essential to monitor any cold spots in the retort accurately to ensure that every part of every can is adequately treated, while keeping the overall cooking time as low as possible. As can sizes vary considerably from those intended for individual domestic use to industrial and catering packs, special care needs to be taken to ensure a uniform heat penetration throughout the product. Keeping the cooking time as short as possible maintains the nutritional value of the product and helps you to meet the demands of your production schedules.
